Ah Lock Tofu

A graduate of Timbre’s incubator programme, first-time F&B entrepreneur Lee Lock Teng serves up classics injected with a lot of creativity: think a signature dish of Hakka tofu rice bowl, which combines his grandma’s decades-old Hakka yong tau foo recipe and elements from Hakka lei cha (thunder tea rice) to be reimagined as a donburi. In his creation, tofu and taupok are stuffed with minced pork belly, deep fried, and then served on warm Japanese short-grain rice. They are accompanied by manicai (sweet leaf) and long beans, two of the key vegetal ingredients in a traditional lei cha dish. This is finished by a soy-based sauce drizzled over the top. Preparation for this dish takes long hours, but for the engineering undergraduate at Nanyang Technological University, who took a semester break from school to tend to his business round the clock, the labour is an expression of his passion for cooking.

Ah Tan Wings

Tan Wee Yang loved har cheong gai so much, that he decided to make the ultimate version himself. It took a long time of testing and tasting to achieve perfection – in fact, the young hawker spent more than a year developing the super crisp har cheong gai coating, and experimented with some 800 variations of the recipe before finally arriving at a version that “is something special”. Despite the superbly long time it took for the wings to well, take flight, we are sure you will demolish his crisp-yet-succulent wings – marinated for two whole days before being cloaked in a special house-made batter and deep-fried  – all within minutes.
